Joto Sakes are a selection of specially crafted brews that honor sake’s traditions and styles without sacrificing quality. Plus, it doesn’t hurt that they look good on a shelf or behind a bar.
Created by the Marumoto brewery in 2001, Hou Hou Shu Sparkling Sake is bottle fermented. Made like Champagne, the first of its type in Japan and the highest quality sparkling sake imported into the USA. The complexity and layers of flavor in this sake are widely beloved among both Japanese and American consumers.
Each bottle is hand bottled with utmost care; highest quality of this type is a core value for the Marumoto brewery.
Hou Hou Shu is soft and creamy with a small bubble, similar to champagne and Belgian beer. The flavor in lively, expansive and balanced, resembling green apple, tart yogurt with sweet fruit undertones.
This sparkling sake was a major innovation when it launched in 2003. It is still one of the few widely available sparkling sakes that derives its carbonation through an all-natural fermentation process. Frequently compared to a moscato, it is light, soft and fluffy, with notes of cream soda and peach yogurt. Serve chilled and neat or with a lemon twist as an aperitif or dessert sake.

Many people love saké but find it intimidating and indecipherable. Founded in 2005, Joto’s mission is to serve as a bridge between Japanese artisanal saké and the American market. We aim to bring the world of artisanal saké to life without “dumbing it down,” “Americanizing it,” or just making it cheesy.
Joto is Japanese for “highest level” and describes the makers of our saké and our aspirations as their importer. We are the exclusive importer for multi-generational, family-owned breweries whom we identify and approach after trying their sake in Japan and reading about their brands in Japanese food and beverage publications. Our jizake (local) breweries are located throughout Japan, producing saké in small batches with locally-raised indigenous rice varieties, offering flavors and styles ideal for a range of cuisines. Our passion for breweries that have rich and wonderful histories makes them fun to learn about and explore.
Joto offers a unique journey into the heart of the world of sake. Our bottles feature English-language labels with producer names, locations and helpful tasting notes. We conduct educational seminars and events throughout the country with our distributors and customers, local businesses and organizations and other trade groups.

Henry Sidel President Joto Sake LLC
Henry Sidel is the President of Joto Sake LLC, which he founded in 2005. Henry started working in the food and beverage business shortly after graduating college and working in journalism. In 1993, he joined Ciao Belle Gelato as the company’s New York Sales Manager. After growing the business in the Tri-State area, in 1995, he moved to San Francisco to build the West Coast operations of Ciao Bella. In 1998, he returned to New York and joined the Brooklyn Brewery as a Sales Manager and then General Manager. In 2002, he joined Belvedere Vodka as Director of International Marketing. Belvedere had just been acquired by Moet-Hennessy and Henry launched the brand through the global Moet-Hennessy network in Europe, Asia, Latin America and Duty Free. Over the years, Henry has had the pleasure of working with Milton Glaser, Wieden+Kennedy, Parallax Design, MKTG, and other marketing and sales partners. Henry’s interest in Japan and Sake started in 1986, when he entered Carleton College. In 1987, he did an intensive language study and homestay program in Tokyo, and went on to study Japanese every semester until he graduated. He did not discover sake until 2001 when he visited New York’s largest sake restaurant, Sakagura. With more than 200 sakes by the glass, Sakagura became Henry’s “go-to” Japanese restaurant. Soon he was buying sake at retail, subscribing to newsletters and compiling a list of prestigious sakes that were not being imported. In 2002, he started business planning and, in January, 2005, he incorporated Joto Sake LLC. His first container arrived in August, 2005 and he has grown Joto to 15,000 9-Liter cases and distribution in more than 35 states.
Henry graduated magna cum laude with a B.A. in Philosophy and a minor in Japanese from Carleton College in Minnesota in 1990. He received his MBA from NYU-Stern’s Executive Program in 2001.
