Tasting Notes
Bright hues of light pink color in the glass. Fresh, fruity, aromas of cherry, red currant and strawberries. Secondary hints of grapefruit and Meyer lemon.
On the palate, fresh and very clean, flavors of cherry, red berries, round and complex. A lively, dry, yet medium body with an elegant and persistent finish.

A Guide to the Crémant de Bordeaux Region
With all the din surrounding the famous red wines and Sauternes of Bordeaux, the region’s sparkling wine, Crémant de Bordeaux, seems like a well-kept secret. There’s not much commercial demand for these wines outside Bordeaux; understandably, the number of producers willing to make them is declining. The estimated area devoted to production throughout the area is only 100 acres (40.5 ha).
Nonetheless, these can be very good sparkling wines. The term Crémant applies to all of France’s best bubblies made under rigorous standards that are similar to those in Champagne, and they must undergo the traditional method of secondary fermentation in bottle. Other than adherence to these strict viticulture and winemaking standards, high-acid grapes (read: underripe) are also necessary, and Bordeaux’s climate certainly makes this part of the equation possible. Crémant de Bordeaux can be made from most of the allowed Bordeaux varieties and comes in white and rosé styles made to varying levels of sweetness.

The family estate was started in 1875.
Farming is completed bio dynamically. The grapes are hand harvested. The Cabernet Franc is whole pressed then fermented naturally in stainless steel tanks with nothing added. In the beginning of the cold winter, the large lees are removed and the wine is bottled and placed in the cellar. A second fermentation takes place in bottle and the wine is cellared for 1 to 2 years.
Hand turning is implemented so as not to allow the sediment to form at the neck. Disgorging and non-dose (adding only the same wine to fill the bottle).
