Austin Hope wines are the standard bearer of luxury Cabernet Sauvignon from Paso Robles. Austin Hope saw the future of Paso Robles when he created his namesake Cabernet Sauvignon starting in 2017. This wine was the culmination of years of exploration, and it immediately made its mark by becoming one of the region’s most decorated wines. Today, Austin Hope Cabernet Sauvignon is synonymous with our personal quest to elevate Paso Robles on the world stage.

Tasting Notes
Dark ruby in color, the 2021 Austin Hope Cabernet Sauvignon expresses aromas of freshly picked black currants, ripe and blackberries, with subtle notes of violets, mocha and dried spices. On the palate, it’s a luscious modern-styled wine layered with an abundance of juicy olallieberry and cherry fruit, while nuances of cedar, clove, nutmeg and vanilla bean round out the long smooth finish. Full-bodied and rich, balanced by fresh acidity and integrated, polished tannins.
Paso Robles
Paso Robles is one of California’s most pastoral domains. Its name roughly translates to “Passageway of Oaks,” and indeed, majestic trees mark the landscape. Amongst the rolling hills and native habitat lie manicured vineyards, where ideal soil exists for farming Cabernet. Dry, warm conditions are typical, yet evenings are chilled by a breeze from the Pacific Ocean just 18 miles to the west, allowing fruit to ripen into luxurious richness.
Winemaking Notes
After harvesting the grapes, select vineyard lots were fermented individually in stainless steel tanks for 10-14 days. Extended macerations and carefully managed pump overs enhanced the extraction of color and tannin. The lots were aged separately for 11 months in a combination of 10% new, 25% once used, and 65% two to three times used French Oak. Through a combination of tasting and analytics our best lots were determined, and the initial blend was assembled in late summer of 2022. As a whole, this blend was aged an additional two months in 75% new and 25% once used French Oak. The wine was racked just twice during its cellar life, with the final racking occurring just prior to bottling.
Harvest Notes
We source our Austin Hope Cabernet Sauvignon from nine of the eleven districts in the Paso Robles AVA: Each region contributing unique characteristics to the depth of the final wine. The Estrella district known for its loamy and gravely river plain slopes and canyons. Creston, known for its large daily diurnal swings aided by the Templeton Gap maritime breezes that make it to the Creston area by early afternoon each day during the growing season. The high flats of the Paso Robles Highlands are near the eastern borders of the AVA, yet receive cooling breezes each day straight from the coast 45 miles away. San Miguel district has large rolling hills and is situated on ancient river plains’and riverbanks that produce an intriguing blend of soils with both loam, gravel and calcareous deposits.
Hope Family Wines
The Hope family has been farming in Paso Robles for more than 30 years. When they arrived in this barely-discovered region, they planted apples and grapes. Little did they know that the rolling, oak-studded terrain of Paso Robles would one day become a viticultural terroir of significance and one of the top winegrowing regions for quality red wine within the Central Coast.
Gone are the apple orchards. Today, the Hopes cultivate mature vineyards of the varieties best suited to their area including Cabernet Sauvignon, Syrah, Merlot, Mourvedre and Grenache. Vine density has increased and each vine is asked to produce very little fruit. The terroir of this domain expresses itself in its unique regional character. Regardless of the varieties planted, the expression of Paso Robles is displayed in the glass with spice, licorice and berry in the nose, soft textures and silky tannins on the palate.

When Chuck Hope first laid eyes on the oak-studded hills of Paso Robles, he saw a land of beauty and opportunity. Struck by the possibilities hidden in the many microclimates of the Central Coast, Chuck and his wife Marlyn moved the family to Paso Robles in 1978 to start what would become Hope Family Wines. They raised their children, Austin and Chelsea, amongst the grapevines and oak barrels and were on the forefront of the Central Coast becoming a world-class viticultural region.
Hope Family Wines is still proudly family-owned and operated with Austin Hope now presiding over five unique labels: Liberty School, Austin Hope, Treana, Troublemaker, and Quest. A true family business, Austin’s wife Celeste, a professional photographer, spearheads all winery-related photography; together they are raising the third generation of Hopes, Ainsley and Avery, amongst the grapevines and oak barrels. Austin maintains the Hope family’s legacy of sustainable farming practices and long-standing tradition of making delicious, reliable, and accessible wines, all while infusing a vibrancy that resonates from the vine to the glass.
