Tasting Notes
This Reserve Cabernet Sauvignon has quickly become our most sought-after wine. It displays an abundance of fresh baked blueberry pie aromas and rich notes of cracked black pepper. On the palate, flavors evolve with fruit forward notes, vanilla bean, cacao and a hint of dried tobacco leaf. The wine finishes with integrated tannins that are soft and supple, accentuating the power and depth of this full bodied Cabernet Sauvignon.
Winemaking
The making of Austin Hope Reserve Cabernet begins with small lot fermentations separated by individual vineyard blocks which receive daily pump-overs for maximum extraction. These lots are constantly supervised, tasted & analyzed for tannin and anthocyanins in order to determine optimal length of extended maceration after fermentation. Once drained and pressed, the young wines are barreled down into a combination of 25% once used and 75% neutral French Oak. In the early Summer of 2021, these lots, already earmarked for the 2020 Austin Hope Cabernet Sauvignon, are tasted by the winemaking team to further isolate individual barrels that display exceptional quality and character for the Reserve program. Once the initial blend was defined, the Reserve wine lots were aged an additional 9 months in 50% new French Oak. In spring of 2022 the lots were blended and received an additional 25% new oak. The wine was racked a final time in June of 2022, just prior to being bottled in July.
2020 Growing Season
The 2020 early growing season was near normal. Rainfall occurred mainly in early winter and early spring and seasonal totals were just below average. Vine growth and berry development was typical through spring. Summer brought unusual heatwaves which slowed berry development, keeping them small with a desirable skin to juice ratio. October was warm and dry, aiding in fruit maturity. Harvest was condensed as most Paso Robles Cabernet ripened at the same time with ideal color and flavors.
Hope Family Wines
The Hope family has been farming in Paso Robles for more than 30 years. When they arrived in this barely-discovered region, they planted apples and grapes. Little did they know that the rolling, oak-studded terrain of Paso Robles would one day become a viticultural terroir of significance and one of the top winegrowing regions for quality red wine within the Central Coast.
Gone are the apple orchards. Today, the Hopes cultivate mature vineyards of the varieties best suited to their area including Cabernet Sauvignon, Syrah, Merlot, Mourvedre and Grenache. Vine density has increased and each vine is asked to produce very little fruit. The terroir of this domain expresses itself in its unique regional character. Regardless of the varieties planted, the expression of Paso Robles is displayed in the glass with spice, licorice and berry in the nose, soft textures and silky tannins on the palate.
Hope Family Wines consists of five individual brands: Liberty School, Treana, Quest, Austin Hope, Troublemaker.
Best Paso Robles Winery
When Chuck Hope first laid eyes on the oak-studded hills of Paso Robles, he saw a land of beauty and opportunity. Struck by the possibilities hidden in the many microclimates of the Central Coast, Chuck and his wife Marlyn moved the family to Paso Robles in 1978 to start what would become Hope Family Wines. They raised their children, Austin and Chelsea, amongst the grapevines and oak barrels and were on the forefront of the Central Coast becoming a world-class viticultural region.
Hope Family Wines is still proudly family-owned and operated with Austin Hope now presiding over five unique labels: Liberty School, Austin Hope, Treana, Troublemaker, and Quest. A true family business, Austin’s wife Celeste, a professional photographer, spearheads all winery-related photography; together they are raising the third generation of Hopes, Ainsley and Avery, amongst the grapevines and oak barrels. Austin maintains the Hope family’s legacy of sustainable farming practices and long-standing tradition of making delicious, reliable, and accessible wines, all while infusing a vibrancy that resonates from the vine to the glass.
