Winemaking:  The wine is obtained from grapes dried in the Appassimento Method.

 

Made from slightly raisined grapes, in the Appassimento Method, this bold and earthy red can double as a little baby Amarone.  Great with braised or grilled food, this wine's rich dark fruit and spicy finish makes for a fantastic evening with or without food.

 

Tasting Notes

 

Color:  Intense ruby red

 

Bouquet:  Aromas of ripe fruit, spices and vanilla.

 

Taste:  Properly fruity on the palate, intense, warm, and with well-integrated tannins, notes of vanilla.  Note flavors of raspberry, cherry, plum and blackberry along with cedar, tobacco, leather and dark chocolate, leading to a persistent finish.

Appassimento is an ancient Italian winemaking technique that involves partially dehydrating grapes to concentrate their flavors, colors, and aromas.  The word "appassimento" translates to "withering" or "fading" in Italian.  The process involves picking ripe grapes, drying them, and then fermenting them into wine.  The grapes lose weight, develop more sugar, and concentrate their flavors during the drying process.

Gran Casato Fratelli Cozza is a wine group Company with several wineries located in the most reputed Italian wine areas such as Veneto, Friuli, Emilia, and Puglia.
