Another outstanding effort from this estate is the NV Brut Reserve. Lightly hued with a crisp bouquet of crushed citrus, golden apples, and toasted brioche, it has medium-bodied richness, crisp acids, a great mousse, and shows a clean, precise vibe on the finish. It brings serious acidity yet still stays nicely balanced. It’s going to evolve for a solid decade. (4/2020)

Mostly from premier and grand cru villages in the Montagne de Reims, this wine is half Chardonnay, and that variety carries its flavors in a vinous direction. Pale golden-apple scents open to a rich, supple and heady Champagne, with some briny notes in the end. Pour it with skate Grenobloise. (12/2019)

Palmer Brut Reserve is based on a selection of wines from the best vineyards in the Champagne region. The Premiers and Grands Crus from the Montagne de Reims area predominate and lend their distinctive personality to these wines.
The nose, amazingly clean, is expressed through a rich palette of aromas, including citrus, pear and apricot with some subtle notes of hazelnut and a discreet touch of buttery brioche.

The Reserve Wines
Selected for their structure and aptitude for ageing, the reserve wines constitute the backbone of Palmer & Co’s non-vintage cuvées. They lend richness and depth to the blends, ensuring that the Palmer & Co style remains consistent.
The Solera System
Palmer & Co is one of the rare champagne houses to have adapted the famous winemaking technique developed in Jerez to the wines of Champagne. In Champagne, the Solera (or perpetual reserve) system is refreshed every year with an addition of wines from the latest harvest.
For over 35 years, we have been working with three Soleras in two stages, the first in oak casks for the new vintage before being added to the perpetual reserve in stainless steel vats.

The red wine Solera is used for creating our Rosé Reserve cuvée while the Chardonnay Solera is used as a spice in the reserve wines of Palmer Brut Reserve and also in the dosage liqueur at the time of disgorgement, and the Pinot Noir Solera is used in the blend of Palmer Blanc de Noirs.

Prolonged Ageing
The Palmer & Co quality is based, first of all, on Time, an essential ingredient of the House style. Our champagnes remain in contact with their yeast sediment for many years. The slow ageing on their lees give the Palmer & Co wines their characteristic refinement and aromatic complexity. Our non-vintage cuvées age for a minimum of three years while the vintage cuvées are aged for six to eight years and our largest bottles age for ten years or more.
