Effervescent Wine
This Semi-Sweet Wine is obtained by blending Croatina 60%, Barbera 30% and uva Rara 10%. Deep red color, aromatic scent of jam. Perfect match for desserts and spicy cheeses.
Sensory Analysis
Intense red with violet shades. Fine, vinous, fragrant fragrance with light hints of jam. The flavor is sweet and embracing, with good body, soft and balanced, vibrant, effervescence.
Pairings
It is generally a dessert wine, it is best expressed when tasted in the company of fresh fruit cakes. Try it with spicy cheeses. Serve at a temperature of 10-11°C.

Production Technique
Classic vinification "in red" with the use of selected yeasts and at controlled temperature. The fermentation is stopped at 80 grams sugar per liter. At the time of release to consumption, it may be characterized by a carbon dioxide development, from a separate fermentation.
Bottling: It is bottled using the cold sterile microfiltration technique.
Parolvini
Located in the heart of the Veneto region, which produces around a fifth of Italy's wine production, between Garda's Lake and the Piave, between beautiful hills and breathtaking plains covered vineyards, which are born some of the most famous wines in the world.
Placed in an area of approximately 70,000 square feet, more than 90 tanks with capacities ranging from 20 and 1000 hectoliters, with a total capacity of 14,000 hectoliters, the company has a modern, fully automated production line capable to produce 6,000 bottles per hour.
The passion and the experience of the owners associated with hard and precise work of our staff and most modern technologies, make the Parolvini a company which has been giving quality and price for over 40 years.
History
The company Parolvini, has origin back in 1917 when the current owner's grandfather used part of his house for the sale of his vineyards' products. The wine trade was later continued by his son, Callisto, which store became a wine benchmark for neighbouring towns.
Around the 70s, Callisto gave to his sons Dario and Bruno the company's care, developing and expanding the business. Collaborating with the producers of the most world renowned in the Veneto, initially the two brothers devoted themselves to supplying local restaurants within a few miles and then expanded gradually areas of northern Italy till cover most of Europe.
Currently the owner Dario Parolin, with the assistance of his sons and nephews trades his wines in countries as Germany, Switzerland, Czech Republic, Poland, Romania, Scotland, Holland, England and Croatia, in this last one creating a distribution branch and starting the own production of Chardonnay, Merlot, Cabernet and Malvazia, having on hand about 20 acres of vineyards.
