Each grape is sorted during the harvest; we work by gravity to respect the natural flow of the juice within vinification process. A light pressing is done to preserve the integrity of the fruit. Terroirs are blended: 50% limestone, 30% limestone clay and 20% flint.
Each terroir is vinified separately in thermo-regulated stainless steel tank. Limestone brings minerality and finesse. Limestone clay enhances fruit and richness. Flint provides structure and minerality.

Winemaking
Each grape is sorted upon receipt of the harvest, we work by gravity in order to respect the natural circuit of vinification. We make a light press and only keep the juices from the gout and the heart of the press. Each grape origin is vinified separately in temperature-controlled stainless steel vats.

Pascal Jolivet Wine
The style of our Signature range is the result of a meticulous work based on gravity, from collecting grapes at harvest to vinification to bottling. The combination of the various terroirs: limestone, clay and flint. 100% indigenous yeasts and slow fermentations confer unique finesse and minerality with an extremely well-integrated acidity.
Each terroir contains its own identity for this pair of distinctive wines. With each wine, our “biodynamic” winemaking” process will bring out their respective qualities and style. These two wines express respectively: the limestone properties in Sancerre and limestone-clay properties in Pouilly Fumé.
Domaine Pascal Jolivet has been built up over years, acquiring plots among the best terroirs of Sancerre. The grapes growing on these plots are harvested by hand. They produce a highly concentrated juice, accompanied by natural and indigenous yeasts, which trigger fermentation. The maturation on fine lees lasts around six months. The outstanding characteristics of each of these plots strengthen the unique style of the Domaine’s wines
Each vine stock is nourished by each terroir’s particularity, and then it is the matter of the winemaker to accomplish his own craft and know-how. These two wines are the result of a philosophy, an ethic and overall, the expression of two great terroirs.
Pascal Jolivet
The house of Pascal Jolivet was founded in 1987 and is one of the most dynamic domaines in France’s Loire Valley. Based in Sancerre, the domaine now owns over 120 acres of prime vineyards spread across the appellations of Sancerre and Pouilly-Fumé.
The domaine supplements the estate holdings with additional fruit sourced from some of the prime terroirs of the region including “les Caillotes”, “le Chêne Marchand”, “les Terres Blanches”, “les Griottes”, and “le Clos du Roy”.
Sancerre wines originate from three soil types: clay, limestone and flint. Sancerre wines are more floral and elegant than wines of the same varietal type in other regions. Pouilly Fumé wines come from an area located on the right (north) bank of the Loire, which offers a large diversity of subsoils from the Ice Age. Pouilly Fumé wines possess characteristic flinty aromas (pierre à fusil), and are slightly rounder and creamier than Sancerre wines. The latter, grown on the left (south) bank of the Loire, exhibit more floral aromas and are bone dry.
Pascal Jolivet also produces a wine called Attitude, a Sauvignon Blanc produced on a single 57-acre estate located to the west of Sancerre in Touraine. This estate’s vines are planted in two distinct terroirs: Chémery, with limestone soils, and Anger sur Cher, with sandy soils. The Attitude wine range also includes a Pinot Noir and a Rosé; the latter is a blend of one-third Pinot Noir, one-third Gamay and one-third Cabernet. Overall, the Attitude trio is made with the same winemaking philosophy, care and focus, as are all Pascal Jolivet’s wines.
Pascal Jolivet is a firm believer in natural winemaking and practices environmentally friendly techniques in both the vineyard and the cellar. The philosophy of the estate is to let nature take its course as much as possible. The juices are fermented with wild yeasts in stainless steel tanks with thermoregulation.
Valentina Buoso is Pascal Jolivet’s new winemaker and she continues to fulfill Pascal Jolivet’s philosophy and practices.
