Vinification
The grapes go through a drying process called “appassimento” that lasts about 3 months or until 40% of the weight is lost then they are crushed. Then follows low temperature maceration for 5 to 10 days and 10 to 15 days of traditional fermentation.
Aging: 4 months in stainless steel and 24 months in 30HL oak barrels
Bottle Aging: 4 Months (Not Required by Law)
Tasting Notes
Nose: Rich scent of over ripe grapes, spicy, ethereal
Taste: Intense yet harmonious. A warm, hearty, cheerful red, with very long, velvety finish.
Food Pairing
A wonderful accompaniment to any red meat dish, roasts and cheeses

From 1906 to today, the Recchia families have always had the vocation of making wine, like their land. With feet on the ground and eyes to the sky, the heart to the vineyard and the head to the wine that will be.
Fall in love with the vine. Of its cultivation but also of its culture: a knowledge that has evolved over time, thanks to the study and monitoring of the soil, its composition and conformation, and a careful choice of layout and type of planting. Because the quality of a wine here is conceived and built starting from the vineyard.
History
It was 1906 when Giovanni Battista Recchia bought a small property in Jago, in the hills above Negrar at the foot of the Masua hill, built his own house and devoted himself to agriculture and the cultivation of vines.
Philosophy
From the earth to the moon. The latest generations have conquered their moon: wine as an expression of the generosity of their land, the cellar as an expression of man's intelligence.
The company today combines the know-how of making wine with oenological science, tuff cellars and advanced technology, retail tasting with global export. It is the conquest of a new awareness, which has made a profession, a way of life and of doing business out of love and respect for the land and the vine.
Valpolicella
Negrar, Marano, San Pietro in Cariano, Fumane and Sant'Ambrogio di Valpolicella.
It is here, in the heart of Valpolicella Classica, that the Recchia company cultivates its passion. A few kilometers from the Verona of Catullus and Shakespeare and under the beneficial influence of Garda, gentle hills to fall in love with, irregular slopes with sides embossed by marogne, dry stone walls that form the bed for the vineyards. Corvina, Rondinella and Molinara grapes as per tradition. It is the cradle of the Valpolicella Classico and Superiore Docs, of the great Amarone and of the Recioto.
