Proemio expresses the historical memory of the territory. Every single vintage accompanies those who know and appreciate it through their lifetime, developing and maturing with great character. Since the grapes come from a vineyard situated in a position largely subject to hot and dry years, Proemio is only produced in the best years and in limited quantities.
At the beginning of October 2015, before the normal harvest, the most loosely clustered bunches of grapes were selected, hand picked and put into 6kg crates and left to wither in a dry and well-ventilated place for 110 days. The natural dehydration process concentrated and enriched the grape juice and encouraged the skin to produce new substances, increasing aromatic complexity in particular. The dried grapes were pressed at the end of January 2016 and underwent cold maceration for 8 days. This was followed by a slow fermentation process lasting 34 days at a maximum temperature of 22 degrees, with a wine yield of 35% starting from the fresh weight. The wine, aged in French Oak Wood, spent 1 year in casks and 3 years in large barrels. This was followed by 12 months of aging in the bottle before being released on the market.
Santi Proemio Amarone
Della Valpolicella Classico DOCG 2015
Proemio Amarone represents the highest expression of the Santi Winery, produced only in the best vintages and in limited quantities.
Tasting Notes
Intense red color; the nose stands out for its complexity, with evident hints of plum, cherry jam and tea leaf followed by notes of dried fruit, licorice and chocolate. On the palate it is full-bodied and round, with a perfect combination of sweet tannins, acidity and the return of the scents felt on the nose, which give a long and savory aftertaste.
“Proemio” is an elegant, austere, classic Amarone that can safely be forgotten in the cellar, for it defies time, anticipating it and summing up the future, just like its namesake.

The grapes are placed in wooden boxes, and left to dry in controlled humidity until February of the following year. After pressing, the traditional maceration takes place over a period of more than three weeks, which is followed by up to 3 years aging in the cellars.
Santi
A Passion for Valpolicella
Excellence is doing ordinary things in an extraordinary way.
Excellence is Ageless.
Santi traces its origins to 1843, when Carlo Santi established a wine cellar in the village of Illasi situated behind the Lessini Mountains, between the hills of Colognola and Lavagno.
Santi is known and respected for its Veneto and Trentino wines.
Santi is situated in the heart of the most acclaimed wine growing zones in the Veneto near Lake Garda. Devoted to the production of Soave Classico, Pinot Grigio, Valpolicella and Amarone, Santi wines are mainly crafted from estate-grown fruit, or from long-standing relationships under the supervision of the Santi winemaking team.
Santi has fully renovated the original winery that accommodates its modern winemaking facility and ageing cellar. In addition to experimenting with the benefits of ageing in new French oak barrels (barriques), Santi emphasizes new techniques to improve the quality of their wines.
From the flagship Pinot Grigio “Sortesele” and crisp Soave “Vigneti di Monteforte” and Rosè “Infinito”, to Valpolicella Classico “Solane” and the classic Amarone, all of Santi’s wines show a well balanced, polished international style.
