Ripassa is the name that Zenato has given to one of their most significant wines. Closely related to Amarone and often referred to as a “Baby Amarone” the “Robust & Powerful,” Zenato Valpolicella Ripassa 2011, composed of 80% Corvina, 10 % Rondinella & 10% Sangiovese is “Outstanding & Delicious!
Immediately after fermentation of the partially dried Amarone grapes, the finest selection of Valpolicella is “repassed,” starting off a second alcoholic fermentation. The alcohol content rises and the wine acquires a richer color with greater extracts and fragrances. After ageing in the bottle for 6 months, this wine becomes extremely long, plush and velvety, with intense fragrances of red fruits. Zenato pioneered this winemaking technique known as “ripasso.” The second alcoholic fermentation produces a wine that has increased concentration and density.
